We have been open 10 a.m. to 11 p.m. 7 days a week for over 20 years. Now I am finding that on most weekdays we really don't do enough business from 10 am to 11 am and from 10 p to 11 pm to cover the payroll for those hours. Has anyone cut an hour from the beginning or the end of a well established schedule? Did your total numbers go down more or less than just the loss of the hour cut?

I open at noon 6 days a week and have recently started opening at 1 on Sun. Mon - Thur we close at 9pm but really during the winter foot traffic dies after 8. Fri and Sat we close at 10 with mixed results.  Sun I close at 6pm. Sundays I'm just trying to catch ppl between church times. It works for me.
